Sticky Orange Chicken

I based this on Gordon Ramsay’s Fast Food recipe, “Sticky Lemon Chicken” and altered it so much, I think I can call it my original recipe now ^_^. Now, the recipe:

Serving: 4

8-10 pieces of chicken, preferably dark meat
salt
4 tbsp of olive oil
8 cloves of garlic, chopped
6 scallions, chopped
splash of plum soju
2 tbsp of soy sauce
3 tbsp of honey
½ an orange, finely sliced

1. Season the chicken with salt and heat the olive oil in a large sauté pan. Brown the chicken pieces (in batches if necessary) over high heat with garlic and scallions for 2 to 3 minutes on each side until golden brown. Return all the chicken to the pan, add the plum soju, and bubble until reduced by half. Drizzle over the soy sauce and honey and shake the pan to mix.

2. Pour in a good splash of hot water and add the orange slices. Let the liquid bubble and reduce down until syrupy, which will take about 10 minutes or so. By now the chicken should be cooked through.

3. Transfer the chicken to a platter and serve with jasmine rice, and whatever side vegetables you wish.

So this is the first time I really tried plating, looks nice (I added sautéed spinach and boiled cauliflower, plus jasmine rice). Oh right, it tastes really good, a honey-orange-marmalade taste. The flavor actually got into the meat well, considering I didn’t marinate it at all, and I manage the manage the crispiness of the skin.

This is my first successful original recipe ^_^.
